Grown by the small farmers of the Abadatezuka cooperative, who deliver their coffee to the Cyato washing station.
Altitude means cooler air, and cooler air shows in the cup: on Réunion Island, researchers found acidity, fruit and overall quality typical of coffees grown in cooler climates.

Ground on espresso (“spro”) burrs, a little coarser than for espresso, and brewed at under 1 bar of pressure instead of espresso’s 9. Filter-like clarity at near-espresso intensity.
Custom roast profiles, tuned to your palate: brighter fruit or richer body, more variety or something simpler. We develop yours with you, starting at the tasting.

Abadatezuka Cooperative
Abadatezuka Cooperative is a group of small farmers in Rwanda's Western Province who deliver their coffee to the Cyato Washing Station for processing.
The roaster writes: Abadatezuka Cooperative is a group of small farmers in Rwanda's Western Province who deliver their coffee to the Cyato Washing Station for processing. This coffee was intentionally processed utilizing anaerobic fermentation, creating a distinct flavor impact, with increased intensity of fruity notes. Honey-processed coffees go through steps similar to washed process, with the difference in the amount of mucilage left on the seed before drying.
APCERL (Asociacion de Productores de Cafe Ecologico Regional Larecaja)
This coffee is an offering from APCERL (Asociacion de Productores de Cafe Ecologico Regional Larecaja), a cooperative of coffee-growing communities in the valleys of Madidi National Park.
The roaster writes: This coffee is an offering from APCERL (Asociacion de Productores de Cafe Ecologico Regional Larecaja), a cooperative of coffee-growing communities in the valleys of Madidi National Park. Organic and Bird Friendly certified, they grow coffee under sustainable agroforestry systems protecting biodiversity and wildlife habitats.

Rebuild Women Hope cooperative
This coffee comes from the women coffee producers of Idjwi island, members of the cooperative “Rebuild Women Hope”.
The roaster writes: This coffee comes from the women coffee producers of Idjwi island, members of the cooperative “Rebuild Women Hope”. The coop helps women take charge of their lives through entrepreneurship and self-reliance. Idjwi island is located in the middle of lake Kivu, along the border of Rwanda, where coffee has long been the main source of income. The soil in Kalehe has young coffee plants which have been regenerated over the last 3 years.
Finca Sol Colibri
Regenified certified, meaning that nature-based solutions are used to help heal the soil, restoring the ecosystem to a high level of functionality while building the land's biodiversity.
The roaster writes: Regenified certified, meaning that nature-based solutions are used to help heal the soil, restoring the ecosystem to a high level of functionality while building the land's biodiversity. This includes a complex incorporation of trees, grasses and ferns throughout the land and between the coffee plants. The soil self regulates nutrients, and create more capacity for the ground to absorb rain water and atmospheric carbon dioxide. Farm: Finca Sol Colibri, a beacon of organic farming for more than 20 years. Its owner, Arturo Segura recently opted for a comprehensive soil analysis to substantiate his organic methods, leading to Finca Sol Colibri reaching a "Regenified Tier 5" certification, the highest grade with Regenified.

Comon Yaj Noptic Cooperative
Comon Yaj Noptic Cooperative: founded in 1995 by a group of smallholder farmers from indigenous groups in the area.
The roaster writes: Comon Yaj Noptic Cooperative: founded in 1995 by a group of smallholder farmers from indigenous groups in the area. (Comon Yaj Noptic means "all of us think.") Today there are about 160 producer members, growing coffee in ideal conditions of altitude, a lush environment, and high-quality coffee varieties. The organization earned its organic certificate in 2003 and its Fair Trade certification in 2009.

This coffee is sourced from family-owned farms organized around Café Brisa Serena (CBS).
The roaster writes: This coffee is sourced from family-owned farms organized around Café Brisa Serena (CBS). CBS is a social enterprise founded in 2010 helping more than 400 small producers to achieve organic certification and establish better farm management practices. It provides as well quality control training and helps improvements in the processing infrastructure like drying structures.

Entre Sierras association
This coffee comes from the “Entre Sierras” association, based in the Perijá, mountains of the Cesar department in Colombia.
The roaster writes: This coffee comes from the “Entre Sierras” association, based in the Perijá, mountains of the Cesar department in Colombia. It groups small-scale farms that produce high-altitude specialty coffee. The project was created to help farmers return to and rebuild their land after decades of armed conflicts.
